Chicken Cacciatore
I love Italian food and this recipe for Chicken Cacciatore is one of my favorites:
Chicken Cacciatore Makes 6 servings
2 tablespoons olive oil
1 roasting chickedn (about 4 pounds), cut up
Salt and freshly ground pepper
1 onion, coarsely chopped
3 large tomatoes, peeled and coarsely chopped
1 clove garlic, finely minced
2 green peppers, seeded and coarsely chopped
1/2 cup tomato puree
1/2 teaspoon oregano
1/4 cup white wine
1/4 cup chicken broth
1 teaspoon sugar
Freshly chopped parsley
Heat the olive oil in a heavy frying pan. Add the chicken which has been seasoned with salt and pepper. Saue until nicely brown on each side. Take out the chicken and set aside. In the same pan saute the onion until it is brown. Add the tomaoes, garlic, green peppers, tomato puree, oregano, wine, chicken broth, and sugar. Mix well and bring to a boil. Add the chicken and simmer covered for 4 minutes, or until chicken is tender. Serve the chicken cacciatore on a preheated platter and garnish with parsley.
