Red Cabbage

This recipe for red cabbage is a great side dish with chicken, goose, sauerbraten. I think you’ll find this recipe for red cabbage is a little different from the usual red cabbage dish but I really like it and I think you will also.

Red Cabbage Makes 6 to 8 servings

1 head red cabbage
2 tablespoons bacon drippings
1 onion, finely chopped
2 carrots, finely chopped
1 cup beef consomme
1 cup red wine
1 bay leaf
2 apples, peeled and finely chopped
2 tablespoons wine vinegar
Salt and freshly ground pepper
